Prichard is hedging his bets. “I ferment Pinot Blanc in barrels, but I mainly use French oak barrels used for a soft impact,” he says. “But I also like to mix a few stainless steel barrels to accentuate the fresh and tangy notes, and acacia barrels to highlight the floral aspects of the grape variety.
